Most of Sarah Waters novels that have been turned into books. "Tipping the Velvet" is better than the book, imo & "Fingersmith" is almost as good as the book. I can't really think of any others, atm.

Stardust by Neil Gaiman was as good as the book. The script was thankfully written by the same author and he actually took a different direction towards the film that really made it distinctive and less comparative to the novel. Brilliant writer. A must see movie.

While the movies are about as good as any adaptation could be, it still seems almost sacrilegious to say that.

Angels of the Universe, an Icelandic movie... The book (written by Einar Már Guðmundsson) was very good, not much less than the movie, but I liked the film better. It touched me more. This I guess is one of the rare instances where I can think of the movie being the better one.

I don't think so. The strength of the novels is in the dialogue, and the combination of the casting and the delivery of those lines makes the movies every bit as good as reading the book. If anything, whilst reading the books I thought that it was tailored for the stage because the spoken words were so much more powerful than the description and that the characters were stunningly vibrant. There are some things in favour of the movies too that might have been misjudged had someone else made it as well. The understated might and austerity of Gandalf for instance, played perfectly by Ian Mckellen, coupled with his gentleness and wisdom. Plus, Tom Bombadil isn't in it which is an immediate thumbs up.
